Sesame Kale and Quinoa with Lite Tahini Dressing

Directions

To begin, prepare quinoa and while that is cooking, clean and chop kale, dice garlic and tomatoes. Heat a wok or large saucepan to medium with sesame oil, Bragg's, garlic and water. Next add kale and lightly sauté for a few minutes, then remove kale from wok and top with sesame seeds. Serve the kale, quinoa, tomato, lite tahini dressing, salt and pepper in the presentation of your choice and enjoy! (Serves 2)

Ingredients

  • 1 Cup Quinoa, cooked
  • 1 Bunch of Kale, sliced
  • 2 Roma Tomatoes, diced
  • 2 Garlic Cloves, diced
  • 2 T. Bragg’s Liquid Aminos
  • 1 T. Water
  • 1 t. Sesame Oil
  • 1 t. Sesame Seeds
  • Salt and Pepper to taste

Directions for Quinoa

To begin, place water and quinoa in a large skillet and bring to a full boil for one minute. Next, reduce heat to a low, cover and simmer for approximately 12 minutes. At around 10 minutes, begin watching to make sure the quinoa is not sticking to the bottom of the pan. When all of the water has been evaporated, take the skillet off of the stove and place a clean hand towel over the quinoa and put the lid back on the skillet. Let the quinoa sit for an additional 10 minutes before removing the towel. This will allow the excess moisture to soak into the towel, leaving the quinoa super light and fluffy.

  • 1 cup Quinoa
  • 2 cups Water
  • Salt and pepper to taste

Directions for Lite Tahini Dressing

In a bowl or food processor, combine ingredients and whip together.

  • 2 T. Tahini
  • 2 Lemons, squeezed
  • ¼ Cup Water
  • 2 Garlic cloves
  • 1 t. Bragg’s Liquid Aminos
  • Salt & Pepper to taste
